With so many options available, it’s hard to know when is best to book your Destin fishing charter. The best season to book a fishing charter in Destin is between May and September, the fishing is at its peak.

This will almost guarantee a successful trip, with fish all but jumping in the boat. However, there may be an often-overlooked season of fishing in Destin. 

Though it may be a different experience than if you were to go during the summer months, fishing during the winter is an incredible time to experience what Destin fishing is all about.

The temperatures are milder, but the water temperatures remain relatively warm. And, while the Gulf waters can be somewhat unpredictable, Choctawhatchee Bay is still accessible and has some excellent fishing.

The next question you’ll need to answer is what time of day is better for fishing in Destin, morning or afternoon? Let’s look at some of the pros and cons of each. 

Morning

Often, morning is the best for schooling fish such as Mackerel and kingfish. This is because these species are often feeding as the sun is starting to rise.

Also, since the tides are changing about that same time, causing more movement in the water, the larger fish are often more active. The morning is also a great time to fish the bay, as the trout and snappers are extremely active at this time. 

Afternoon

Fishing in the afternoon doesn’t mean you sacrifice any action. In fact, if you’re going after sailfish, such as marlin, or big sharks, the afternoon might be best as these larger fish tend to turn on the action as the sun is starting its downward motion. 

Best charter length (Destin)

When looking at fishing charters in Destin, you’ll see options for half-day, full-day, and multi-day trips. The best charter length is going to depend on several factors. 

Half-day

Half-day fishing charters are perfect for novice anglers, those who can’t spend all day fishing or groups with children.

With it being so close to deep waters, even a half-day trip will provide plenty of opportunities to catch a boatload of fish, and even a chance at a large marlin, though these are less likely to be sought after on a shorter trip. If going to the Bay, a ½ day trip will still guarantee double-digit lands in one trip. 

Full-day

If you’re on the hunt for your first blue marlin or after a huge shark, a full-day trip is almost a necessity. Fighting a marlin or shark and getting it to the boat can often take multiple hours, not to mention the travel to and from the fishing waters.

Those aren’t the only species available on a full-day fishing charter in Destin. The sailfish, a distant cousin to the marlin, peaks during September and October while the wahoo is hot from May to September. 

Multi-day 

Multi-day trips are extremely popular during the summer months as they offer a vast array of fishing options all in one trip. Many will start off the trip reef fishing for amberjacks and snappers. Then, once they are between 60 to 200 miles offshore, the hunt for the big tuna and marlin begins.

And, though you can definitely catch a big marlin on a full-day trip, a multi-day trip makes it as close to a guarantee as possible. Plus, food and lodging are usually included onboard the boat.

Destin has some of the most diverse species of fish around. From the monsters in the gulf to the abundant fish which call the Choctawhatchee Bay home, you’ll be hard-pressed to find a more diverse population. Here’s a breakdown of some of the top species you will find. 

Shark

No Destin fishing list would be complete without mentioning the shark. There are several species of sharks in the gulf, including the mako, hammerhead, tiger, and nurse sharks. Shark fishing peaks in March and April and then again in September and October.

These are also able to be caught in the Bay, so a deep-sea charter isn’t required, but will give you a greater likelihood of catching one. 

Blue Marlin

Many anglers come to Destin for the trophy blue marlin. These are some of the biggest fish you can catch. The blue marlin peaks in Destin from July to September. You will want to get an offshore charter, and likely a full-day trip at the very least. 

Tuna

Both the yellowfin and bluefin tuna migrate into the Gulf during the summer months. And, while things start heating up in April, the peak season for tuna in Destin is July through September before they head back out to warmer waters. 

Cobia

Destin is considered by many to be one of the top places in the world for cobia fishing. Cobia love to be around floating objects such as buoys and pilings, as well as around wrecks and in the bays.

Cobia fishing in Destin has two different peak seasons; the first is in April while the second goes from September to October. 

Dolphin

Another popular trophy fish in Destin is the dolphin fish or the mahi-mahi. The bigger ones will be out in the deep waters of the gulf while some have been caught in the bays as well. The peak in Destin is between June and September. 

Tarpon

This prehistoric fish is a staple of the Destin fishing world. The tarpon is an obligate air breather, which means it must breathe at the surface, similar to whales.

That’s why, when you get one to come to the surface, the fight is only beginning when many other species do this when they are done fighting.

Tarpons can take hours to reel in but are sure to be worth the fight. They peak during the spawning season, between May and August.

Destin Fishing & Tidal impacts

Destin fishing can be greatly affected by the tide. Like most other fishing locations, Destin often has several feet of difference between high tide and low tide. This equals a great amount of movement in the water.

When you mix that movement with the different currents found in the Gulf, that’s a ton of movement. This is good for fishing as more movement often equates to more active fish. 

As the sun rises and the tides fall, baitfish become more active which, in turn, causes the bigger fish to begin feeding while there’s still some darkness in the waters. The darker waters allow them to spend less energy hunting as they can stay more concealed. 

If you’re offshore fishing, though, you likely won’t notice much of a change in the tides. Inshore and shore fishing, however, will be greatly affected. Pay attention to the tides so you don’t get caught in a bad predicament. 

Top Destin Fishing Spots (Best Times)

Though Destin, as a whole, is an incredible fishing destination, there are some specific spots that are a must-visit for the best adventure. 

100-Fathom Curve

This is the section of the Gulf that is the deepest; it just so happened to be just 10-12 miles off the coast of Destin. No other location in the Gulf of Mexico has that quick of access to deep waters.

Here you’ll find the waters are near 600 feet deep. This makes this area perfect for groupers, snappers, cobia, and many more large species. 

Choctawhatchee Bay

As mentioned previously, Choctawhatchee Bay offers the best inshore fishing in Destin. There are several grass flats, jetties, docks, and bridges that make the perfect place for drum fish, speckled trout, snapper, and amberjack just to name a few.

These peak during the summer months, while the winter season brings with it some great fishing in the bay as well. You’ll find the waters in the bay much calmer than that in the Gulf, making for the perfect family fishing adventure. 

Okaloosa Island Fishing Pier

If charter fishing isn’t what you’re after, the Okaloosa Island Fishing Pier is a great alternative. It extends 1300 feet into the Gulf, giving access to some great fishing.

The further out on the pier you go, the more fish change, both in species and size. Expect to catch drum fish, trout, and flounder, among several other types. 

Coast Guard Station

A stone wall around the Coast Guard Station has become the perfect home for several species of fish. The flounder, snapper, amberjack, and mullet can be found here, among many others, and the peak season is between May and September. 

East Pass

Separating the peninsula of Destin from Santa Rosa Beach are man-made jetties known as East Pass. Here you’ll find snapper, sheepshead, and mackerel while bottom fishing will net you amberjack and grouper as well. These species do tend to peak between June and August. 

Storms & Destin Fishing Timing

The Gulf of Mexico is prone to tropical storms and hurricanes. These wreak havoc on the fishing in Destin. Several days before the storms hit the fish will begin moving out to deeper waters as they can sense the change in pressure.

The waters of the Gulf will also become choppier days leading up to a big storm making it almost impossible to go out on a charter. 

The Bays aren’t as affected early on, but as the storms get closer, they, too, will get to the point you won’t want to be out on them. It takes a few days for these conditions to normalize. The bad part is peak hurricane season is also when peak fishing season is in Destin. 

Another item on the weather side of things to be prepared for. Florida, especially Destin, is known for its pop-up rain showers.

The sky could be clear one minute and literally the next a monsoon-like rainstorm hits. While these often don’t last long, they do have an effect on fishing. 

Is winter fishing in Destin bad or good?

While winter often brings the end of the fishing season in many places, the fish are still biting in the winter in Destin. Though the Gulf waters are rough, you can still expect to land a massive tuna as the waters cool slightly.

However, if you’re fishing in Destin during the winter, you want to be sure to put Choctawhatchee Bay on the list. Fly Fishing for the speckled trout is still hot, while the flounder, white snapper, and redfish are also likely, along with white bonita and sheepshead. 

The best part of fishing in the winter in Destin is the weather. It only rains, on average, six days a month during the winter and the temperatures stay between the 40s and 60s. Though a light jacket is needed, it sure beats the swelter of summer fishing.
